How to prepare biscuits with fig jam
To prepare cookies filled with fig jam, start with the preparation of the base dough: put the diced butter in a mixer and work for a couple of minutes, add the sugar, egg and a pinch of salt while continuing to work the dough. When the ingredients are well absorbed, add the flour and baking powder.
Continue to knead until you have obtained a homogeneous dough. Wrap the dough with a sheet of cling film and let it rest for two hours in the refrigerator.
After the rest time of the dough, start rolling it out on a floured cutting board. Then divide the dough into strips about 8 cm wide. Stuff each strip with fig jam, close and seal the edges with the prongs of a fork. Cut the various strips to form small cookies.
Transfer the cookies to a baking tray lined with parchment paper, brush with a little milk and bake in a preheated oven at 350 °F for 15 minutes. When cooked, remove the cookies from the oven and let them cool on a cooling rack.
