Preparing the Easter Sweet Cake is not complicated at all and only takes a little time. We can prepare it the evening before Easter and then enjoy it, as tradition dictates, for breakfast or as a dessert at the end of the Easter lunch with the family.

How to prepare Easter Sweet Cake
In a bowl, mix the flour and the potato starch with the Dry Yeast using your hands.
In another bowl, put 2 whole eggs and a yolk, add the sugar, oil and Vanillin, grated lemon, cinnamon and start mixing with a fork. Add the warm milk while you continue to mix.
Incorporate the mix of flour, potato starch and dry yeast into the bowl of liquids, a little at a time, and when the dough acquires consistency, move it onto a floured pastry board and continue to work it, until a homogeneous and elastic consistency is obtained.
Put the dough back into the bowl, make the classic cross cut and cover with cling film to let it rise for about 2 hours, until doubled in volume.
Then put the dough back on the pastry board, rework it slightly, spread it out and add some Candied Macedonia if you like them, then close the dough to incorporate it.
Grease and flour a tall, narrow mold (7 inches wide), pour the dough into it and let it rise again for about 30 minutes.
After this time, bake and cook in a preheated oven at 350 °F for 45-50 minutes.
How to make the Basic Sugar Glaze
In a medium bowl, combine the powdered sugar, softened butter (or margarine) and Vanillin until smooth, adding enough milk for desired glaze consistency.
Take the sweet cake out of the oven, let it cool a little and distribute the sugar glaze on the surface with the help of a spoon.
