Pandoro filled with Tiramisù Cream
Preparation: 30 minutes - Cooking: no cooking
Difficulty: Easy - Portions: 6-8 persons - Cost: Low

1 Pandoro Maina
5 teaspoons of Unsweetened cocoa powder
6 cups of Espresso Coffee
½ cup of Rum (optional)

Ingredients for the filling cream
18oz of Mascarpone Cream
3 eggs
6oz of sugar
1 Vanillin sachet

How to make Tiramisù Cream
Beat the egg whites with 1.7oz of sugar until stiff peaks form and set aside.

Whip the egg yolks with 3.5oz of sugar and the vanilla packet until the mixture is light and fluffy. Also add the mascarpone and whip again.

Incorporate the whipped egg whites into the egg yolks and mascarpone mixture several times, stirring gently with a spatula so as not to dismantle the mixture.

How to Prepare the syrup
To prepare the syrup, simply mix the espresso coffee with rum of your choice or simply use the espresso coffee to wet the pandoro.

How to prepare the Pandoro  with Tiramisù Cream
Cut the pandoro into transversal slices so as to have as many slices of 1/2 inch thickness in the shape of a star.

Place the base of the pandoro on a serving dish, wet it with the syrup and spread a little mascarpone cream over it.

Then place the next slice of pandoro, wet it and spread the tiramisù cream over it. And so on until all the ingredients are used up.

Finish with a little mascarpone cream and a sprinkle of bitter cocoa to taste.
