This delicacy comes from the Italian island of Sardinia. Pecorino Moliterno Cheese with Black Truffle is semi-hard and is made from sheep's milk. Unlike most truffled cheeses, this one is aged on its own before the truffle paste is infused, which permits the cheese to develop its own character apart from the truffle.
