This is a hard cheese with a cooked, compact paste and a crumbly, soluble structure. In addition to milky notes of melted butter, the aroma of Piave DOP Vecchio presents evident vegetal scents accompanied by the slightest of nutty nuances. The flavor is characterized by sweet and savory notes, which are less intense than in the case of shorter ripening periods and have greater persistence on the palate. The color is more intense as is the thickness and hardness of the rind.
