Warning: Once you taste these roasted artichokes you will never be able to enjoy another brand of artichokes. These are the most delectable artichokes I have ever tasted. The combination of tender artichokes and delicious oils and herbs are a celebration for your palate. Eating San Giuliano artichokes is truly an otherworldly experience. You can use them in dishes or you can just eat them alone. Do not dispose of the oil that is left in the jar because it can be used for cooking. I made a potato, mushroom, and grated Parmesan omelette with the oil and it was delicious. I admit it, I’m obsessed with these artichokes.
