Pennette Positano Zucchini & Saffron are a simple and refined Italian main course. The unmistakable taste of saffron gives a greater boost to the zucchini’s delicate flavor.
Preparation: bring 650ml of water and 2 or more tablespoons of Extra Virgin Olive Oil to a boil, pour the contents of the bag, cover and cook over medium heat, stirring occasionally until the water is almost completely absorbed. Add a ladle of boiling water for less al dente cooking. Season with salt, let it rest for 1 minute, add the saffron and 1 or 2 tablespoons of warm water to mix before serving with extra virgin olive oil.
Useful tips: add ¼ cup of white wine while cooking and 6 shredded shrimp tails just before serving.
Wine-pairing: Sauvignon or other medium-bodied white wine.
