I love this cheese. Reminds me of the cheese my father's family sent us from their sheep farm in abruzzo. Love it grated or just a chunk with crusty bread.
Used this cheese to make Spaghetti Carbonara, with the Guancaile and some noodles imported from Italy. It wasn’t quit the same but the flavors were amazing, and it was close enough to bring back the memories we made there.
