White Truffle, better known as White Alba Truffle, is surely the most precious variety of truffle from an economic and culinary point of view. Its gleba is unmistakably white and yellowish with small white veins. The surface is smooth ochere or olive-yellow, sometimes also greyish-black. The picking season goes from the end of September to the beginning of January.
1oz of product is recommended for 2-3 portions.
Harvest Regions: Piedmont, Emilia Romagna, Tuscany, Umbria, Marche, Lazio, Abruzzo, Molise.
Product life: up to 1 week, kept in a refrigerator at 37.5 F (3 C). We recommend consuming the truffles soon after they are received, preferably within 2 days.
IMPORTANT: In order to reach the weight purchased, the order might be made up of several smaller truffles rather than one single truffle. (This is because the truffle is a product of nature and it is not always available in the exact weight desired for purchase.)
